Garlic Bread and Garlic Dip

After looking at a number of recipes to make garlic bread at home, I finally found a recipe by Neha Deepak Shah who made it to the finals of Masterchef India season 4 that worked. I have however adapted her recipe to make my own version. I also have a dip that I can say I have made on my own and is not inspired by anyone else. So here is the recipe for both – hope you try and enjoy too.

Garlic Bread Sticks

Ingredients

  • 2 cups of All Purpose Flour
  • ¼ cup Whey (this is collected when you hang curds and is the drained water from the curds)
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 tbsp Chilli Flakes
  • 2 tbsp dried mixed herbs (Oregano, Thyme, Parsley, Sage – anything works)
  • 2 tbsp chopped garlic
  • 2 tbsp Butter (I used Amul Garlic butter but any butter works)
  • 2 tbsp curds
  • 2 tbsp boiled sweet corn kernels
  • 3 tbsp cheese – (I used Amul processed cheese but any hard-grated cheese works)
  • 1 tbsp oil (I used Olive Oil but any vegetable oil works)

Method

  • In a bowl mix All Purpose Flour, Baking Powder, Baking Soda, Salt, Chilli Flakes and dried herbs. Add the curds and whey (ensure you add it little by little) and combine to make a soft dough.
  • Knead the dough for about 10 minutes with a little oil, cover with a damp cloth and leave aside for one hour.
  • Mix butter (at room temperature) with chilli flakes, dried herbs and finely chopped garlic.
  • After one hour divide the dough into two parts. This needs to be rolled out thin – like for a paratha after dusting some flour. Now apply the prepared butter mix in the middle. Add sweet corn and cheese and fold into half. You can do this by applying some water on the edges of the rolled dough and ensure you completely seal the edges.
  • Repeat this with the other half of the dough. Use a butter knife to make vertical marks on the dough, do not cut it.
  • Preheat an oven for 10 minutes at 180 degrees centigrade. Bake the breads for 20 minutes at 180 degrees centigrade.
  • Once done, remove immediately and cool for about 10 minutes. The bread is ready to be enjoyed with a garlic dip.

Garlic Dip

Ingredients

  • 400 grams Set curds
  • 1 tsp sugar
  • 1 tsp Salt
  • 1 tsp fresh ground pepper
  • 1 tsp dried mixed herbs (Oregano, Thyme, Parsley, Sage – anything works)
  • 1 tbsp chopped garlic
  • 1 tbsp oil (I used Olive Oil but any vegetable oil works)

Method

  • Hang the set curds in a sieve and let it rest overnight in the refrigerator. You will see a firm and soft mix that looks like cream cheese. Do not throw the whey collected in the container below – use it as a drink (you can add curds) or to make a dough.
  • Empty the hung curds into a large bowl.
  • Heat a small pan and fry the chopped garlic in oil till it turns slightly brown. Allow to cool completely.
  • Add salt, sugar, fresh ground pepper, dried herbs and the fried garlic and mix well. That is all – best enjoyed with garlic bread.
