Culinary Adventure to Rajasthan in Bengaluru

Howard Johnson is organizing an exclusive Rajasthani Food Festival at their in house restaurant from Sep 16-25, 2016 and I had a chance to sample a vegetarian thaali recently. Ably led by the talented Chef Dev Bose and his team, the meal that followed was an ode to the culinary fare from the land of royalty.

The Food

The thaali is wholesome and very filling – it will be a challenge to eat it completely! The first thing that caught my attention was the melange of colours on my plate. From the yellow Rajasthani kadhi to the green Ker-saangri ki sabji and the colourful salad wrapped with a spring onion, the plate is extremely pleasing on the eye. A copper glass with lassi added to the overall experience. Coming to the food, there is an array of vegetables including Arbi ki sabzi, Paneer sabzi, Dal bati churma, Mirchi sabzi, Bajra roti, Missi roti, Paneer tikka and more. Each item on the menu is authentic and tasty. The churma was sweetened just right and simply melts in your mouth. The sabzis and roti complement each other very well. In all this was a plate full of surprises and one that got me very full. The non vegetarian thaali has a variety of options including Laal maas, Chicken rogni tikka and Safed murgh among others.

Speaking to Chef Bose, I understood that much thought has gone into this festival. “The team including the F&B manager and marketing brain stormed for a long while before we decided on the Rajasthani menu. Since we had done international cuisines as part of our earlier food festivals in the past, we wanted to do something Indian this time and with the upcoming Dasara festival, we felt that a Rajasthani Food Festival would be apt. Once we decided on it, I made arrangements to ensure that we get all the local items from Rajasthan especially the local vegetables for the ker saangri. We have researched on the recipes to ensure that we can give our guests an authentic flavour.” Incidentally, the food festivals are a great way to take feedback from guests on the dishes that are popular to get eventually added to the a-la-carte menu. Read my interview on him from an earlier story here. A meal for two will be INR 1000+ taxes (approximately).
