And this is a recipe you can make any day – after all mother’s do not need to be celebrated on one day. Stuffed Zucchini parcel is a recipe that uses simple ingredients like zucchini, cheese and tomato sauce..

Carrot cupcakes by Chef Sunil Singh Blue Bop Café

Ingredients

  • Eggs 2 no
  • Caster sugar 120 grams
  • Carrot 180 grams
  • Maida 120 grams
  • Baking powder 5 grams
  • Baking soda 5 grams
  • Cinnamon powder 5 grams
  • Oil 75 grams

For the Cream cheese Frosting

  • Cream cheese 150 grams
  • Icing sugar 30 grams
  • Whipped cream 100 grams

Method

  • Take a bowl and add castor sugar, eggs, and butter mix to make a smooth paste once the mixture is ready add grated carrot in it.
  • Mix all dry ingredients Maida, baking powder, baking soda, and cinnamon powder in another bowl.
  • Mix all the ingredients together and remove them from a baking tray
  • Preheat the oven to 170 degree centigrade for 15 to 20 minutes. Once the cake is cool it down completely apply the cream cheese frosting.
