World Wetlands Day and probably the day to share some images from a recent trip from Ankasamudra is a bird sanctuary near Hosapete (Hospet). A hotspot for hundreds of migratory and resident bird species. This wetland has just been added to Ramsar list. Pictured here are the Black headed Gull, Black Tailed Godwit, Black winged stilt, Purple moorhen, Ruddy Shelduck, Glossy Ibis, Collared Plover, Greater Flamingos, Glossy Ibis and more.

Some glimpses from my recent stay at WelcomHeritage Cheetahgarh Resort & Spa. Located in Bera, Rajasthan this property is spread over 20 acres of lush greenery, and has 20 rooms, a spa, fitness centre and a swimming pool. Special mention t the absolutely outstanding food by @chef_bhanwar_rathore_1981
The best part are the leopard safaris, I also wanted to see the Sarus Cranes and the team obliged. Some encounters with the Rabari tribe, visiting the Jawai dam and a local temple visit were part of the activities too. Thanks @sunshineritul @tresindia @yudhistersingh and @bhawani_singh_6298 for making it all possible.

Some vegetarian food from the fabulous Italian fare by Italian Chef Simone Loisi who is visiting Shangri-La Bengaluru for a pop-up where he is showcasing his expertise in Southern Italian cuisine. The renowned Italian chef is Chef de Cuisine at Shangri-La Singapore’s Italian restaurant, Waterfall Ristorante Italiano and is showcasing his signature handmade pasta and heirloom recipes that have been passed down through generations in his family.

The set menu for lunch and dinner will feature the Burrata Pugliese, Spaghetti Alle Vongole, Penne All Assassina, Funghi E Capesante, Linguine Allo Scoglio, Panna Cotta Con Sciroppo Di Amarene and Crostata Al Pistachio. The specials on the menu will include the Calamari Scottati Su Purea Di Ceci E Rosmarino and Cavatelli Ragu Di Agnello E Porcini and shareable dishes like the Pollo Girarrosto Al Rosmarino E Limone and Branzino in Crosta Di Sale. There will also be a selection of Romana style high-hydration dough pizzas such as Bufalina, Verdure, and Siciliana.

Get set to go on a culinary culture of Puglia at Caprese, Shangri-La Bengaluru from 28 April 2023 to 7 May 2023.
