While the sun shows no sign of relenting, you can stay cool by choosing the right food to eat. And if you are wondering how, this is for you.

On a recent visit to WelcomHeritage Cheetahgarh Resort & Spa in bera Rajasthan, I met Bhanwar Singh Rathore, Executive Chef, who introduced me to a unique recipe called Rajasthani Ghaat Chaas. And when I heard Chaas I assumed it would be a version of butter milk. However when the dish arrived on my table, it was almost like a thick porridge with vegetables and grains and was light and flavoursome.

Chef then explained that this is a dish that cab also be served with warm milk which is really enjoyed by the kids. It can also be consumed with curd and butter milk by adding Rock Salt, roasted cumin powder, onion, red chilli powder and chopped green chillies to enhance its taste. This is a low-calorie food that is rich in nutrients and this delectable dish is also beneficial in digestion, swelling, gastric problems and anaemia. Makki ka daliya (Maize porridge) is full of iron and fibre so it keeps you energised for the entire day.
