While orange carrots are available year round, red and black carrots are available in winters only in India
One can make halwa with red or black carrots
Gajar Ka Achar is a pickle that is prepared by incorporating carrots, kalonji, mustard seeds, fenugreek, turmeric, salt, asafoetida, red chilli powder and mustard oil. Make sure that it should be moisture free.
Carrot especially the black variant can be sued to make a probiotic beverage. You can make Kanji with either red carrots or black carrots or with a combination of both. Kali Gajar Ki Kanji is a delectable traditional North Indian Probiotic Drink. It is packed with nutrition & tangy and pungent in flavour and is prepared by fermenting batons of black carrots in water mixed with salt, black salt, Black pepper powder, asafoetida and coarsely ground black mustard seeds.
Carrot Shorba or soup is prepared by incorporating carrots, onions, butter, spiced with pepper powder. Pair it with garlic crackers or garlic soup sticks for a refreshing meal.
Carrot poriyal is a Tamil Nadu Style stir fried preparation, made with carrots that are finely chopped, salt to taste, tempered with peanut oil, mustard seeds, cumin seeds, dried red chillies, curry leaves, chopped onion, salt to taste and a pinch asafoetida, with shredded fresh coconut (optional)
Carrot Kheer (Gajar Ki Kheer) is a delicious & creamy kheer prepared using fresh winter red and juicy carrots, milk, sugar and mixed nuts. Serve it chilled or warm.
