Debaditya Chaudhury is the founder/ Managing Director of a renowned chain of restaurants, Chowman, Oudh 1590 & Chapter 2 spread across Kolkata, Delhi NCR, Bangalore, Mumbai & Hyderabad.
A foodie by heart and a musician by soul, Debaditya conceptualised Chowman as India’s first ever neighbourhood fine-dining experience. And right from the beginning of conceptualising Chowman, he had been stern on bringing a bend to the prevalent Chinese food narrative in Bengal by spearheading Chinese food in its traditional, authentic form.
This whole idea itself seemed to be challenging, especially after the age-old adaptation and appropriation of Chinese food topographically. Also, he wanted to work on his concept of “Democratizing Fine Dining Experience”.
This was followed by the emergence of Oudh 1590 – (a true “period dining” experience recreated in today’s kitchens reminiscing the the culture and cuisine of Awadh (modern day Lucknow) savoured at the table); and Chapter 2, the perfect fusion of retro dining, with continental food from the recollection of 940s to 1970s Calcutta.
