Recipe: Barley Salad

I recently have been reading up on the health benefits of barley and wanted to try something new. So I made this simple salad that is full of health and flavour!


4 tablespoons barley cooked

1 green apple

1 medium sized carrot

1 small red bell pepper

1 small yellow bell pepper

1 small green bell pepper

1 mid sized tomato

1 tsp mixed herbs

1 tsp extra virgin olive oil

1 tsp fresh lemon juice

1 tsp freshly cracked black pepper

Salt, to taste


Soak the barley for half an hour and pressure cook (two whistles) with a little water. Allow the barley to cool completely.

Finely chop all the ingredients – green apple, carrot, tomato, bell peppers.

In a bowl add the drained barley, chopped vegetables, olive oil, lemon juice, mixed herbs, black pepper, salt and mix well.

The salad is ready to serve.
