“Koththamalli by Rohan” is Jetwing Ayurveda Pavilions’ dedicated vegan and vegetarian restaurant. As one the finest wellness resorts in Sri Lanka this peaceful oasis was designed around the ancient healing science of Sri Lankan Ayurveda. Keeping with this theme, the restaurant offers an expansive à la carte or set menus with a wide range of dishes based on Ayurvedic recipes that have been passed down from generation to generation. Diners can enjoy a wide range of exotic food and beverages that are low in sodium, sugar, and oil, with clean and simple ingredients that have numerous health and nutritional benefits, effectively complementing the Ayurvedic therapies we offer.
With the healing sciences in mind, the in-house guests at Jetwing Ayurveda Pavilions enjoy specially curated and individually prepared meals following a consultation with our in-house Ayurvedic doctor who recommends the diet for the entirety of the stay based on the individuals body constitution. All meals at “Koththamalli by Rohan” are prepared after careful and extensive research into the healing and nutritional properties of each ingredient. Jetwing Ayurveda Pavilions is a resort dedicated to the art of Ayurveda, it’s a place where modernity meets tradition and therefore the meals served at our restaurant are a reflection of this aspect. We are constantly researching ways to create new and innovative recipes that are rooted in Ayurveda but also have a modern twist and we are striving to change the common misconception around vegan food.

Here is a recipe for Peanut Chutney:
Ingredients:

Roasted Peanuts 1 cup
Green Chilies 2-3 (adjust to your spice preference)
A small piece of tamarind (about 1/2 inch)
Cumin seeds 1/2 teaspoon
Salt to taste
Water (as needed)

For Tempering (optional):
Oil 1 tablespoon
Mustard Seeds 1/2 teaspoon
Urad dal 1/2 teaspoon (split black gram)
A few curry leaves
A pinch of asafoetida (hing)

Method:
● Using a blender or food processor, combine the roasted peanuts, green chilies, tamarind, cumin seeds, and a small amount of salt.
● Pulse the ingredients until they form a coarse powder.
● Gradually add water in small increments, blending until you achieve your desired chutney consistency. Some individuals prefer a thicker consistency, while others opt for a thinner one. Adjust the salt to taste and blend again.
● If desired, you can prepare a tempering for the chutney. In a small pan, heat some oil and add mustard seeds, urad dal, curry leaves, and asafoetida. Let them sizzle and release their aroma.
● Drizzle this tempering over the peanut chutney and thoroughly mix it in.
