This is a great way to enjoy muesli with the goodness of Whole Wheat, jaggery and extra virgin olive oil
Ingredients
1 cup Whole Wheat flour
1/2 cup extra virgin olive oil
1/2 cup boiled and cooled milk
1/2 cup chocolate muesli
2 tbsp cocoa powder
2 tbsp powdered jaggery
1 tsp baking powder
1 tsp baking soda
A pinch of salt
1 tbsp extra virgin olive oil (for lining the tray)
Method
In a bowl mix all the ingredients together to form a runny mixture.
Allow the mixture to stand for 10 minutes.
Pre heat the oven for 10 minutes at 200 degrees centigrade.
Line a baking tray with extra virgin olive oil and using a spoon, heap small spoonful’s of the mixture on the tray, taking care to leave gaps as the cookies will expand inside the oven.
Set to bake for 15 minutes at 200 degrees centigrade.
Leave in the oven for 5 minutes.
Remove from oven, take care and use gloves as it is very hot and cool on a wire rack for 10 minutes.
Enjoy with a cup of tea or coffee or as a healthy snack.
Notes
You can use any cooking oil you have in case you do not have extra virgin olive oil.
You can use any muesli if you do not have chocolate muesli – a nuts based muesli will give you a delicious nut cookie.
For vegan option, use almond or soy milk.
