Chef Anand Morwani is Chef-Partner at Gaijin, Mumbai. Trained at Les Roches and Le Cordon Bleu, London, Anand has built and worked across multiple hospitality formats in the city.

His current focus is Gaijin, where he approaches Japanese cuisine from the perspective of an outsider—grounded in classical technique and respect for tradition, while shaped by travel, lived experience, and global exposure.

At Gaijin, Anand is involved across the restaurant’s development, from menu and sourcing to service philosophy and overall positioning, offering insight into how the concept has been shaped and refined.

In 2014, he co-founded Brewbot, the first microbrewery in Mumbai’s suburbs. The concept took off and became a beloved local institution, earning the NRAI’s ‘Best Microbrewery in Mumbai’ award.

Brewbot 2.0 followed in Bandra in 2019—right before the pandemic forced a reset. But as Anand puts it, “life is a like a box of chocolates”—and in that moment of chaos, he found new opportunity. He teamed up with long-time collaborator Rohan to create a wildly popular pop-up raan biryani concept, which eventually evolved into Rocketman Pizza, a Detroit-style pizza brand that quickly made its mark.

His latest venture, The Big Zest, is a catering company that blends fine-dining flavours with big, bold gatherings—because if there’s one thing Anand knows how to do, it’s bring people together. His latest venture, Gaijin, is a restaurant that tells the story of an outsider looking in, capturing the essence of Japanese cuisine through a fresh, unconventional lens.
