- Restaurant Elizabeth, a 14-seat chef’s counter on NYC’s Lower East Side, will open late 2027. Among the must-haves is the truffle cappuccino, which is a black truffle soup that is topped with a sous-vide foam (made from white onion sauce). Interestingly, the backstory to this is his startup called Truffle Shuffle. “We started selling truffles, and nobody would buy them, so we turned it into soup and then started selling dinner. And the soup was something people absolutely loved. Growing up, my mum kept a box of Cheez-Its in the car and one in the house — it was always around. “That memory is being reimagined as a little almond cake stuffed with Parmesan. There is also the California mole made with chocolate from Mexico, peppers from India, and a spicy condiment, gochujang, from Korea. And as baked Alaska is his mom’s favourite dessert, he has a chai-tea baked Alaska as well.
