They allow restaurants to collaborate, experiment, and tell new stories through food and drink. For guests, it’s a chance to try something they wouldn’t usually have access to, whether it’s a visiting chef, a different cuisine, or a limited-time menu.

A pop-up is an exciting time when a restaurant brings its food and philosophy to a different restaurant in a new city where they aren’t currently located. and allows us to share the kind of food we’re creating and the ethos behind our cuisine. These collaborations are a chance for us to travel, explore, and gain a fresh perspective on how the world is engaging with food. It’s also a valuable way to understand how different cultures and communities approach food, shaped by their unique experiences.

Pass Code Hospitality has exemplified the potential of bar pop-ups through several successful initiatives. In May 2025, PCO participated in the Roma Bar Show, taking over two bars in Italy. This event not only showcased Indian mixology on an international platform but also facilitated cross-cultural exchanges, where both sides learned, absorbed, and grew. These international bar takeovers are not merely about showcasing cocktails; they are about forming industry connections, exchanging techniques, and building bridges through shared experiences.

For chefs and brands, they’re a great way to tell their story to a new audience, build buzz, and gauge interest in a new market. And from a guest’s perspective, it’s not just about eating, it’s about discovery.
